Crawfish Boudin Is Amazing!
A friend picked up some links of crawfish boudin from Billy's Boudin in Scott LA. I froze them, and nearly a year passed before I finally thawed and cooked one. After trying it, I honestly regretted waiting so long because this is some of the best boudin I've ever had. It is definitely on the spicy side, but the flavor is fantastic.
I like to pan-fry my boudin sometimes, so I split the casing open and fried it in about a tablespoon of canola oil with a little salt. Man, this had incredible flavor. It crisped up in the pan very quickly, giving it just enough of a crunch without drying it out. The crawfish flavor was very noticeable, but not fishy at all. Everything about it was fantastic.
I definitely regret not cooking it sooner, but I'll know better next time. I'll be stopping at one of their locations again the next time I'm traveling through Louisiana.— Paul
