Total Surprise. Bison Meatloaf Wellington. It Was Amazing My First Visit
What To Order: Bison Meatloaf & Craft Beers.
I was in town doing photography and had heard there was a brick roundhouse that had been converted into a strip mall. When I arrived I saw the sign for the Colorado Mountain Brewery.
I stepped inside and immediately smelt the BBQ. I hadn't eaten yet and since I was planning to try a beer or two asked for a menu. The prices weren't bad and the item that caught my eye on the menu was the Bison Meatloaf Wellington. Id never heard of bison meatloaf, Its rare to see bison anything.
I ordered a 7258 beer which is a light blonde beer, and waited for my food. The beer was pretty good, but when the food arrived and I took my first bite I was blown away. The Bison Meatloaf Wellington is described as Bison mixed with shallots and mushrooms, in a puffy pastry. Served with garlic mashed potatoes and ginger glazed carrots. The new menu says its topped with a signature Amber Ale Sauce. Im not sure if it has changed but when I ate this item it tasted like it was topped with an A1 type steak sauce.
The Bison Meatloaf was amazing, it had a ton of flavor and was unlike anything I've ever had. The spiraled dough the meat was baked into, was like croisant dough, that was buttery, flakey and light. It gave the dish a balance of dense, meaty, savory, soft, doughy, flakey textures and flavors.
The interior of the bar/restaurant was very nice, the walls are custom glass windows with arched tops built into the original roundhouse train entrances. The west facing windows have a great view of the mountains.
Service was good, food was excellent, prices were fair. My meal and beer totaled about $23.
I highly recommend this place whether your a local or tourist. The photo is from my 2nd visit. The meatloaf had changed a little, I didnt find it as good as the first visit. At this point I had seen a TV chef who had visited and highlighted this menu item as well. I havent had a chance to go back and try it to see how it is now.— Paul
