    On my Seguin BBQ trip, my second stop of the day after Burnt Bean was Schulze's Pit Room.

    **Location**
    The restaurant is located just off I-10 on Highway 123, housed in a large, dark gray and wood building on a corner lot. While the entrance doesn’t have much signage, there is a clear sign at the edge of the parking lot.

    Upon arrival, I was pleasantly surprised to see a nearly empty restaurant after waiting over half an hour at Burnt Bean. I was visiting between lunch and dinner, so most of the lunch rush had come and gone. I parked, walked in, was greeted, and found only one group ahead of me.

    **Custom Sausages & Sides**
    The prices were slightly on the higher side, but not out of line with other local BBQ spots. I ordered a 1/3 lb of brisket again, and noticed an item that caught my attention. Brisket boudin sausage, but just my luck they were sold out! I also noticed baked potato salad on the menu.

    While many of the sides looked tempting, I was mindful of having already eaten a partial meal at the last stop, and was considering a third stop after this one.

    After grabbing some pickles and onions from the condiment bar, I found a table. The interior was welcoming, with wood & brick walls, and plenty of space for larger groups.

    **The Brisket**
    I took my first bite of brisket, and it was fantastic. The meat was fall-apart tender. It had a rich smoky flavor, a line of fat running through the slice, a peppery and salty bark, and a beautiful smoke ring around the edge. It checked all the boxes for things I look for in a perfect brisket.

    Then I tried the BBQ sauce, which was sweet and tangy without being overly peppery or vinegary. It complemented the brisket well, adding flavor without overpowering the meat unless you really slathered it on.

    **Overall Impression**
    After finishing my brisket, I went to the counter to let them know I thought it was "the best brisket I've had today." They asked where else I had eaten, and when I mentioned Burnt Bean, they were pleased to hear my feedback. The staff even brought out the owner, and I let him know that I thought their brisket was far superior.

    The owner told me his sausage chef was actually out of country teaching another restaurant owner how to make sausage, and as soon as he was back the boudin would be available again. So I guess I'll be coming back, next time with an empty stomach as so many items looked good.

    Honestly, this might be some of the best brisket I’ve ever had. Once I revisit my rankings list, I’ll have to reconsider who holds the top spots — as Schulze’s Pit Room definitely deserves a place near the top, and a return visit to rank all the other items and try that boudain sausage.
