Good BBQ, Good Sides, But Inconsistent Brisket
I was unaware of Blanco BBQ for quite a while, but after finally giving it a try and having an excellent meal, I started frequenting the location. I even recommended it to a few people, only to have them come back and tell me they didn't think the brisket was very good. When I returned myself, I had a meal that unfortunately wasn't nearly as good as my first visit.
I didn't go back for a while, but when I eventually did, the brisket was good again. Over my next six visits, however, I noticed a lot of inconsistency. Sometimes the brisket was less moist and on the dry side, while other times it seemed to be missing much of the smoky pit flavor I had enjoyed before. I'm not sure whether it's the particular cuts of meat or differences in the pitmaster, but the brisket has definitely been inconsistent from visit to visit.
The sides have been much more consistent. The beans, creamed corn, and onion rings are all really good, with the creamed corn and onion rings being my favorites. The onion rings have a nice, thin, flaky crust, and the portions of the sides have always been pretty generous.
I also really like the open condiment bar. You can grab a paper boat and fill it with seasoned onions, pickles, salsas, and other toppings. It's a nice touch and gives you plenty of options to customize your meal.
Parking has never been a problem for me, and even when the restaurant is busy, my food has never taken more than a few minutes to come out. Wait times have generally been minimal.
Overall, I have mixed feelings about Blanco BBQ. When the brisket is on point, it's excellent—good enough that I'd probably put it in my top 10 briskets. Unfortunately, when it's off, it falls into the average range along with the dozens of other BBQ spots around the area. The potential is definitely there, but the inconsistency keeps it from being a place I can confidently recommend based solely on the brisket.
