No Service At First, Good Service Once Seated. New Mexico Burger Was Really Good

I visited Bobby’s Burger Palace during my latest trip to Las Vegas. I was walking along the Strip looking for somewhere to grab a late dinner when I spotted it and decided to stop in.

Bobby’s Burger Palace has a pretty interesting burger menu, with a wide variety of toppings and combinations that go well beyond the standard burger options. Some of the choices include the Carolina Burger with mustard BBQ sauce and the New Mexico Burger with diced Hatch chiles, queso, and pickled red onion. There are also several different cheeses to choose from, along with toppings such as avocado, potato chips, and plenty of other combinations.

They also offer shakes, malts, fries, and several other sides, with the option to add alcohol to some of the drinks.

I ordered the New Mexico Burger but substituted smoked cheddar for the queso and left the rest of the toppings as they normally come. When ordering, they ask how you want your burger cooked, or what temperature you prefer. I went with medium.

The burger came out exactly as I had ordered - pink in the middle, juicy, and nicely charred on the outside. The smoked cheddar was slightly melted over the patty, with a generous pile of chopped green chiles under it and a little pickled red onion on top. I tried the burger by itself before adding any sauce, since the table has several available, including chipotle ketchup, burger sauce, and jalapeño sauce. It had plenty of flavor on its own, but I also tried the burger sauce towards the end. It had an interesting flavor that reminded me a little of A.1. steak sauce, although it was milder and had less of that sharp bite.

My waiter was very friendly and checked on me during the meal to make sure everything was good. Another employee also stopped by to check on things, so once I was seated, the service was good.

The one issue I experienced was when I first arrived. A gentleman was already standing at the counter waiting to order, but there was nobody there to take his order, and he eventually left. The employees were busy cleaning, mopping the floors, and restocking supplies about an hour before closing, but the ordering area is around the corner and isn't visible from much of the dining room. The entrance is also partially hidden by a large sign, so customers can easily come in without being noticed if nobody is stationed at the register.

Despite that, I had a good experience overall. The food was good, the burger selection was interesting and different from the usual choices, and the atmosphere was nice. There were several other burgers on the menu that caught my attention, so I’d definitely come back to try another one.

The restaurant is just around the corner from the Aria and faces the Strip, making it a convenient place to stop if you’re walking around the area. The interior is modern and colorful, with wood surfaces, brick walls, and a fresh, contemporary feel.

If you enjoy burgers and like trying different gourmet toppings and combinations, Bobby’s Burger Palace is worth checking out. For me, it’s definitely up there with some of my other favorite burger spots in Las Vegas.
